Song of the Shrimp

Allow me to englighten you about the simplest ingredients for a festive evening—shrimp, tortillas, and the tequila of your choice. My friend was quite excited about coming over to enjoy fresh ceviche…and apparently I was as well (I kept sneaking bites with a spoon before my guests arrived). We paired this ceviche with stuffed chicken jalapeno quesadillas and a tequilla sunrise. Quick, colorful, and fun.

Shrimp Ceviche

  • 20-30 shrimp, no tails, peeled 
  • 1 tablespoon salt
  • juice of 4 limes
  • 1 cup  chopped red onion
  • 1 serrano chile, minced
  • 1 1/2 cup chopped cilantro
  • 1 hothouse cucumber
  • 1 medium tomato
  • 1 teaspoon cumin
  • Mix ingredients together and refrigerate for 30 minutes
Vamos a tomar tequila!
