tell me what you eat & I’ll tell you who you are

Sometimes, the tasiest meals find their way onto your plate and into your mouth when you think you have absolutely nothing in your fridge. I jazzed up this brown rice pasta with feta cheese, broccolini,sun dried tomatoes, red bell peppers and a lemon rosemary dressing. See! Cooking for one can be fun, too!

For the dressing you will need…
1 sprig of rosemary
1 garlic clove
1 strip of a lemon peel
3/4 cup of olive oil
1/4 cup of lemon juice
Lightly crush the garlic and rosemary with a knife. Put the rosemary, garlic, and lemon peel in a jar then pour in the oil and the lemon juice. Put the cap on and shake well. This dressing will keep for about a week in the fridge.
Pour over your pasta and veggies and enjoy the company of YOURSELF:)
