Caramel Apple Cider Cookies

Frank Sinatra has a song entitled, “Ida Sweet As Apple Cider.” He sings of a girl who is sweeter than all he knows who comes out in the silvery moonlight. He can’t live without her and he loves her…a lot. That, my fellow food friends, is how I feel about these cookies. They are sweeter than all I know. They come out in the silvery moonlight post dinner time. I can’t live without them. And I love them. It’s short and to the point, I know, but isn’t that the way all the best things in life are supposed to be? Okay okay…and sometimes, when we get really lucky (REALLY lucky) the best things last a while :) May that motivate you to make a double batch!
 
Ingredients (makes about 3 dozen)
1 cup  butter, softened
1 cup granulated sugar
½ teaspoon salt
1 box Alpine Spiced Apple Cider Original Instant Drink Mix (all 10 packets)
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon cinnamon
3 cups all-purpose flour
1 (14 ounce bag) Kraft Caramels, unwrapped
 
Directions Preheat the oven to 350 degrees and line baking sheets with parchment paper. In a small bowl, whisk together flour, baking soda, baking powder and cinnamon.  In the bowl cream together butter, sugar, salt and all 10 packages of apple cider drink mix until smooth. Beat in the eggs. Mix in the vanilla. Gradually add the dry ingredients from the small bowl into the creamed butter mixture. Mix everything together. Scoop dough into balls about 2 tablespoons each.  Flatten the dough in the palm of your hand and add a caramel in the center. Make sure the caramel is covered completely and roll the dough back into a ball placing  them on the baking sheets about 3 inches apart. Bake for 12-14 minutes. Make sure the cookies are lightly golden around the edges before removing them from the oven. Allow them to cool before eating…or do as I did…and risk burning your mouth :-)
