Vietnamese Shrimp Lettuce Wraps

I’m just going to preface this entry by saying that one of the best bonding experiences children can have with their parents is to partake in saki bombs together. It’s an epic feeling when you reach the point of drinking with your parents on Friday night, even more epic when those nights become more fun than you typically have with friends your own age. Mom, Dad…you rule. Vietnamese shrimp lettuce wraps…you rule too.



Ingredients:

2 tablespoons fish sauce 2 tablespoons lime juice juice 2 teaspoons sugar 1 teaspoon Asian chili paste 2 garlic cloves, chopped 1 pound cooked shrimp 1 tablespoon soy sauce 1 tablespoon rice vinegar 2 tablespoons cilantro 1 cup purple cabbage 1 cup green cabbage 3/4 cup peanuts Butter lettuce leaves mint for serving



Directions:

In a small bowl combine the first 5 ingredients (use this for sauce mixture). In a separate bowl combine everything else but the lettuce. Serve shrimp wrapped in the lettuce leaves and top with mint.  Serve fish sauce mixture for dipping.
