Jalapeno Guacamole Dressing

After a long day at school, a good friend and I decided we wanted something hearty but “girly.” To us, that means lots of veggies and lots of flavor! We decided on chicken apple sausage and salad with a homemade dressing. Once the dressing is done, it can be drizzled over both the salad and the sausage. It’s crunchy, tasty, and fills you up without making you feel guilty :)

Ingredients (makes two cups of dressing)
One large avocado
2 jalapenos
The juice of one lime
1 tablespoon minced garlic
1/2 cup fresh cilantro
1/3 cup extra virgin olive oil
1/3 cup white balsamic vinegar

Directions
Liquify all ingredients until smooth and creamy. I wanted my dressing thick so I went heavy on the avocado. If you prefer a lighter dressing; use less avocado and add more olive oil & balsamic vinegar until desired consistency is reached!

*We used heirloom tomatoes, arugala, and Persian cucumbers in our salad. So yummy!
