Nini's Simply Sensational Shrimp Skewers

Hello to a sunny summer day :) Isn’t it comforting how certain foods can trigger such vivid memories of a time, place or season? When my mother fixes anything on skewers, especially shrimp, I am instantly transported back to the blue beach house with the red door. It’s Fourth of July with fireworks in the background when I’m twelve, or the morning of Labor Day when the beach is so crowded at 7am that I can’t even see the sand. If I close one eye and stare at the skewers for long enough, it’s almost as if I can taste the salt of the Pacific Ocean on the tips of my tastebuds. When my mother came outside with a tray of these buttery delights a few nights ago, I felt an insant wave of relief wash over me.  Nothing else mattered besides shrimp, a glass of chardonnay, and of course—-my mother.

Cilantro Butter Shrimp Skewers
Ingredients: (makes 6 skewers)
30 large shrimp
1/2 cup melted butter
2 tablespoons cilantro
juice of 1 lime
paprika, salt, & pepper
Directions:
Soak skewers for 20 minutes in water. Place 5 large shrimp on each skewer. Combine melted butter with cilantro and lime juice. Brush mixture over shrimp. Season shrimp with paprika, salt, and pepper. Grill for three minutes.
