Cake With Cream Cheese Frosting
I absolutely love cooking and baking with homegrown fruits. My dad is always offering his bananas to guests and family—he makes daiquiris with them, puts them on his cereal, makes smoothies…you name it, he does it. I’m not a big fan of bananas but I’m a very big fan of this cake. The combined flavors of the cream cheese, the walnuts, and the bananas work really well to compliment each other. If you want to go for banana overload, pair this dessert with a banana daiquiri. Or…a glass of cold milk works too :)
Ingredients:
2 cups bananas mashed, ripe 3 cups flour 1 1/2 teaspoons baking soda 1/4 teaspoon salt 3/4 cup butter, softened 2 cups sugar 1/4 cup brown sugar 3 eggs 2 teaspoons vanilla 1 1/2 cups buttermilk Frosting:
- 1/2 cup butter, softened
- 1 (8 ounce) package cream cheese, softened
- 1 teaspoon vanilla
- 3 1/2 cups powdered sugar
- Preheat oven to 350°.In one bowl, mix flour, baking soda and salt.
- In another bowl cream the butter and the sugar
- Beat in the eggs, one at a time, and stir in the vanilla.
- Beat in the flour mixture alternately with the buttermilk.
- Stir in banana.
- Pour the batter into a pan and bake for 30-40 minutes
- For the frosting, cream the butter and cream cheese until smooth.
- Beat in 1 teaspoon vanilla.
- Add powdered sugar and beat on low speed until combined.
- Spread on the cake and sprinkle chopped walnuts over top of the frosting. Decorate with cut bananas.
