Stuffed Blue Cheese Turkey Burgers & Spicy Sweet Potato Fries

This is a variation on your typical burger and fries meal. It’s a little gourmet with tastes that will surprise you. Most of my family members opt out of the turkey option when it’s placed next to beef, but last night four out of five went with the blue cheese burgers. The moisture of the meat is maintained in the turkey because it is stuffed with mushrooms which make it juicy and keep it from becoming dry. If you are in the mood to feel slightly fancy, get your hands on these ingredients and go for it!

Stuffed Blue Cheese Turkey Burgers
Ingredients:
1 pound ground turkey (I used 99% fat free ground turkey from Trader Joe’s)
6 fresh mushrooms, finely chopped
3/4 cup crumbled blue cheese
1/2 red onion, finely chopped
arugala, Dijon mustard, and roma tomatoes for serving
season with salt and pepper
*makes about 6 medium-sized turkey patties
Directions:
Place patties on a prepared grill and cook for about 10 minutes per side. Serve on a whole wheat bun with arugala, Dijon mustard and roma tomatoes.

Spicy Sweet Potato Fries (serves 4)
Ingredients:
4 medium sweet potatoes
1/2 teaspoon ground cumin
1/4 teaspoon chilli powder
5 sprigs of fresh thyme (I love the taste of thyme…so I tend to go heavy on it!)
2 tablespoons olive oil
season with ground pepper and sea salt
Directions:
Peel and cut the sweet potatoes. Mix the cumin, chilli powder, fresh thyme, olive oil, salt and pepper, and toss well to coat.
Spread out in one layer on a baking tray.
Bake on 450 for 20 minutes
