The recipe for these cupcakes arose spontaneously as I looked into my fridge and realized I had nothing besides vanilla Greek yogurt and blueberries. In an effort to avoid a pre-birthday cucpcake making trip to the store, I decided it was time to concoct a new recipe: blueberry vanilla cream cupcakes.
Ingredients: (makes about 24 cupcakes)
Cupcakes
3 1/4 cup flour
1 1/2 cup blueberries
1 1/2 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup butter
1/4 cup vegetable oil
2 eggs
1/2 cup vanilla Greek yogurt
1 cup milk
2 teaspoons vanilla extract
Frosting:
1/2 cup butter
3 cups powdered sugar
1 teaspoon vanilla extract
8 oz (1 package) cream cheese
Directions:
Preheat the oven to 350 degrees. Combine dry ingredients. Whisk melted butter and oil in a bowl. Add eggs. Whisk in milk, yogurt, and vanilla extract then add mixture to the dry ingredients. Stir in blueberries. Bake for 20-23 minutes. For the frosting, combine softened butter, vanilla extract and softened cream cheese. Mix in the powered sugar one cup at a time. Dye with food coloring if desired.
