Double Chocolate Stout Raspberry Muffins

Double chocolate stout beer exists? Why yes, it most certainly does. A good friend of mine is consumed by anything and everything about beer. He serves it, brews it, drinks it and cooks with it. We wanted to make something that was easily transportable and would not crumble on his bike ride back home. We first whipped up a small batch of failed cookies that came out tasting like flat muffins…so we gave up on the idea of cookies and pursued the muffins instead. These would be perfect for a birthday party of a beer-loving friend.
Ingredients: (this makes about 36 muffins)

  • 1 1/4 cup butter 
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup semisweet chocolate chips, melted 
  • 6 ounces raspberries (one package) 
  • 4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 cups vanilla chips
  • 12 ounces of double chocolate stout 

Directions:
In a mixing bowl, cream together the butter and sugars. Add eggs, one at a time. Beat in melted chocolate and pureed raspberries (I used a potato masher for the raspberries). Combine the flour, baking soda and salt and stir into the mixture gradually along with the beer. Stir in vanilla chips.Fill muffin tins and bake for about 13-15 minutes.
