Why is it that people disregard blondies in favor of their competitive counterpart, brownies? No…I am not biased (maybe slightly) but even I seem to throw blondies onto the backburner when presented with the option of the delectably darker brownie. I have now put my foot down and am venturing into the direction of unknown territory; I will no longer describe blondies as brownies without the chocolate, because we all know that’s just silly. We don’t describe blondes as brown haired people without the brown, now do we? Nope. So here is to all my supernatural cosmic blonde babes out there who have perhaps been overlooked as lacking intellectual prowess simply due to their lovely locks. Besides, no one could argue with Rod Stewart when he said blondes have more fun. So, grab some blonde friends, rock out to some Rod Stewart and whisk away into the wonderful world of an equally as tasty variation of the famous brownie.
Bay’s Blondies
Ingredients:
1/2 cup of butter, melted
1 cup dark brown sugar
1 egg
1 teaspoon of vanilla
1/2 teaspoon baking powder
1/8 teaspoon of baking soda
1/4 teaspoon of salt
1 cup of all-purpose flour
1/2 cup of white chocolate chips
Directions:
1. Preheat your oven to 350°F. Lightly butter or spray an 8X8 pan. Whisk together the melted butter and sugar in a bowl.
2. Add the egg and vanilla extract to the mixture and continue to whisk.
3. Add the flour, baking soda, baking powder, salt. Mix ingredients together and then add the white chocolate chips.
4. Pour into the pan and spread evenly. Bake for 20-25 minutes or until a toothpick comes out clean. Allow to cool. Cut into squares and serve! This makes about 9 blondies.
